Caesar Salad with Chicken–Free Bites

INGREDIENTS

5 cherry tomatoes
1 avocado
170g romaine lettuce
200g Chicken-Free Bites
3-4 slices baguette, preferably a day old
10 thin slices Parmesan cheese or vegan alternative

For the dressing:

200g Greek yogurt or soy yogurt
10g Extra virgin olive oil
8g Dijon mustard
2g Nori flour (half of a sheet)
10g Freshly juiced lemon juice
150g Parmesan cheese or vegan alternative, grated
Pinch of sugar, salt, black pepper, asafetida, rosemary

PREPARATION

  1. Whisk together: Greek yogurt or soy yogurt, olive oil, Dijon mustard, rosemary, asafoetida, Nori flour, a pinch of sugar, salt, black pepper, lemon juice, parmesan or vegan alternative.
  2. Chop cherry tomatoes, avocado, romaine lettuce.
  3. Make croutons with aromatic herbs: Roughly chop the baguette. Rub the oil into the bread and season with a little salt if you like. Bake for 8-10mins, turning the croutons a few times during cooking so they brown evenly.
  4. Thinly shave Parmesan or vegan cheese with a peeler.
  5. Fry the Bites on high heat until golden, 3-5 min.
  6. Place the vegetables in a bowl and add parmesan, Chicken-free Bites, drizzle with Caesar dressing, top off with croutons et voilà! Enjoy!
